FCV Cuvée

The FCV Cuvée is a Syrah-dominate blend whose components can vary year to year based on the winemaker’s discretion. The 2021 vintage had a little more Merlot which added roundness to the mid-palate and makes for a charmingly balanced wine.

The year started with disruption brought by winter storm Uri but progressed into a more mild year. Cooler temperatures remained throughout the growing season enabling the grapes to maintain good acidity– translating into flavor and true expression of varietal character. After harvest the grapes were sent to the winery to be hand-sorted and whole-berry destemmed. The berries rested for 4-6 days prior to fermentation. The medium-warm fermentation brought out intense berry fruit flavor and round mid-palate structure. The wine was aged sur lie for 6 months followed by an additional 15 months of barrel aging in 80% new French oak and 20% well-seasoned neutral oak.

The nose opens with red currant, vanilla and thyme. The palate entry shows strawberry and cedar box with hints of black plum and leather. We recommend serving the wine between 60-65°F. Gentle decanting will bring out the aromatics and flavor components. Texas barbeque, gumbo and charcuterie pair well with this blend.

Clusters were destemmed and berry-sorted then sent to tank for warm fermentation where the wine spent 22 days on the skins. 100% French Oak (80% new) for a total of 21 months in barrel prior to bottling.
